I'd vary, depending on the style of wrestling.
For example, for European-style matches, I use MMA Rules (sadly, I couldn't do tag team matches or multi-man matches on these rules, so it's singles only, but you can have up to three people in your corner) with the following settings...Set the match at 12 3 Min. Rounds (15 Rounds if it's a championship match), Victory can be attained by Pinfall, Submission, Disqualification, Countout, and Knockout, and there's no knockdown limit.
